Ingredients

The following ingredients have 4 Servings
  • 4 mashed bananas
  • 2 eggs
  • 2/3 cup gluten free flour (or white whole wheat flour)
  • 1/8 tsp cinnamon
  • pinch of nutmeg
  • pinch of salt
  • 1/3 cup chocolate chips
  • 1 tbs avocado oil

Instruction

  • Mash the bananas in a large bowl. Add the eggs, and stir to mix together.
  • In a small bowl, stir together the flour, cinnamon, nutmeg, and salt. Add the dry ingredients to the wet ingredients and mix to combine well. Stir in the chocolate chips.
  • Heat the avocado oil in a large skillet over medium heat. Drop the batter into the skillet by heaping tablespoon (2-inch to 3-inch diameter for each fritter). Cook until lightly browned on each side (a minute or two), or until golden brown. You'll need to do this in multiple batches.
  • Serve warm. Makes 20 fritters.
