Ingredients

The following ingredients have 4 Servings
  • 1-1/3 cup all-purpose flour
  • 1/3 cup granulated sugar
  • 3 Tablespoons brown sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 2-3 bananas, mashed, about 3/4 cup
  • 1/2 cup sour cream
  • 1/3 cup canola oil
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 1/4 cup melted butter
  • 1/2 cup powdered sugar
  • 1-2 Tablespoons heavy cream
  • 1/4 teaspoon vanilla extract

Instruction

  • Preheat oven to 350 degrees F. Lightly grease a 8x8 inch pan.
  • In a large bowl, mix together flour, sugar, brown sugar, baking powder, baking soda and salt. Set aside.
  • In a medium bowl, mash the banana. Add sour cream, oil, egg and vanilla. Mix until well combined. Stir thoroughly into the flour mixture.
  • In a small mixing bowl, stir all ingredients together until crumbly.
  • Spread half the cake batter evenly into the prepared pan. Sprinkle with 1/2 of the streusel. Pour the remaining batter evenly over the streusel. Top with remaining streusel.
  • Bake for 35-40 minutes, until a toothpick comes out clean.
  • Whisk all ingredients in a medium bowl, until creamy and smooth. Drizzle over warm coffee cake. Slice and serve.
