Ingredients
The following ingredients have 4 Servings
- 125 g butter softened
- 1/2 cup caster sugar
- 2 eggs
- 2 bananas large mashed ripe
- 1 tsp bicarbonate of soda
- 1 1/2 cups self-raising flour
- 1/4 cup milk
- 1 1/2 cups icing sugar
- 30 g butter melted
- 2 1/2 tbs lemon juice
- 1 tbs desiccated coconut *to decorate
- 2 drops yellow liquid food colouring
Instruction
- Banana cake: Preheat oven to 170C with fan, 185C without fan.
- Cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well in between. Stir in mashed bananas until combined.
- Put in half of the sifted dry ingredients and stir to combine. Add the rest of the dry ingredients and the milk, and stir until smooth.
- Pour mixture into a greased 20cm round cake pan.
- Bake for 30 minutes, stand for 5 minutes in tin then transfer onto a wire rack to cool.
- Icing: Combine icing sugar and lemon juice in a bowl and mix well, making sure no lumps remain.
- Add the melted butter and mix thoroughly.
- Add a few drops of yellow food colouring for extra richness in colour. Spread over cake and sprinkle with coconut.
