Ingredients

The following ingredients have 4 Servings
  • 125 g butter softened
  • 1/2 cup caster sugar
  • 2 eggs
  • 2 bananas large mashed ripe
  • 1 tsp bicarbonate of soda
  • 1 1/2 cups self-raising flour
  • 1/4 cup milk
  • 1 1/2 cups icing sugar
  • 30 g butter melted
  • 2 1/2 tbs lemon juice
  • 1 tbs desiccated coconut *to decorate
  • 2 drops yellow liquid food colouring

Instruction

  • Banana cake: Preheat oven to 170C with fan, 185C without fan.
  • Cream butter and sugar until light and fluffy. Add eggs one at a time, mixing well in between. Stir in mashed bananas until combined.
  • Put in half of the sifted dry ingredients and stir to combine. Add the rest of the dry ingredients and the milk, and stir until smooth.
  • Pour mixture into a greased 20cm round cake pan.
  • Bake for 30 minutes, stand for 5 minutes in tin then transfer onto a wire rack to cool.
  • Icing: Combine icing sugar and lemon juice in a bowl and mix well, making sure no lumps remain.
  • Add the melted butter and mix thoroughly.
  • Add a few drops of yellow food colouring for extra richness in colour. Spread over cake and sprinkle with coconut.
