Ingredients
The following ingredients have 4 Servings
- 4 tbsp mashed ripe banana (about 64 grams weighted; approximately 1 small banana)
- 2 tbsp coconut flour
- 1/4 tsp baking powder
- 1/8 tsp cinnamon
- 1 large egg
- 1 tsp olive oil
- 1 tsp maple syrup
- 2 tbsp almond milk
- 1 tbsp chopped walnuts
Instruction
- In a microwave-safe mug, add all ingredients except walnuts. Whisk until batter is smooth. Stir in walnuts.
- Cook in the microwave at full power for about 2 minutes or until cake is cooked. Allow cake to cool a few minutes before eating. The banana flavor will be more prominent if you allow the cake to cool for about 15-20 minutes.
