Ingredients
The following ingredients have 5 Servings
- 12 oz fresh or frozen tortellini
- 1 package Aidell’s chicken sausage (cut into half-circles)
- 1 green bell pepper (diced)
- 1 red bell pepper (diced)
- 2 TBS olive oil (divided)
- 3 cups tomato basil marinara sauce
- 2 TBS high-quality balsamic vinegar
- 2 TBS Italian Seasoning
- ½ tsp garlic salt (or to taste)
- ¼ tsp garlic powder
- ¼ tsp onion powder
- ¼ tsp black pepper (or to taste)
- 1 cup mozzarella cheese
- ¼ cup grated parmesan cheese
Instruction
- Cook tortellini according to package instructions. Drain and rinse with cool water. Set aside until ready to use.
- Preheat oven to 375 degrees F.
- In a small bowl, mix together Italian seasoning, garlic salt, garlic powder, onion powder and black pepper. Stir gently to combine. Set aside.
- In another small bowl, mix together the mozzarella and parmesan cheese. Set aside.
- Place chopped chicken sausage and 1 TBS olive oil in a cast iron skillet over medium-high heat, stir to combine.
- Cook, stirring occasionally until the sausage begins to brown (about 5-7 minutes)
- Add diced peppers and additional 1 TBS olive oil and cook until peppers become soft (about 5 minutes).
- Once peppers are soft, add marinara sauce, balsamic vinegar and seasoning mixture and stir to combine.
- Add tortellini and stir until evenly combined.
- Taste and adjust seasonings if necessary.
- Remove skillet from heat and spread the top of the mixture until it’s flat and even.
- Sprinkle cheese mixture evenly over the top of the skillet.
- Place the skillet in the preheated oven and bake for 15-20 minutes, or until the cheese is melted!
- Let cool slightly and serve!
