Ingredients

The following ingredients have 4 Servings
  • 1-1/2 lb. young carrots
  • 2 tbsp. ghee
  • 2 garlic cloves (minced)
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. raw honey (optional)
  • Fresh parsley (minced)
  • Sea salt and freshly ground black pepper

Instruction

  • Preheat the oven to 400 F.
  • In a bowl, combine the ghee, garlic, honey, balsamic vinegar, salt, and pepper, and season to taste.
  • Mix in the carrots and toss until well coated.
  • Place in the oven and roast for 25 to 30 minutes.
  • Serve topped with fresh parsley.
