Ingredients

The following ingredients have 4 Servings
  • 3 pounds chicken pieces
  • 2 tablespoons chopped fresh parsley leaves (optional)
  • ½ cup olive oil
  • ⅓ cup balsamic vinegar
  • 1 lemon (juiced)
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 2 teaspoons minced garlic
  • ½ teaspoon dried oregano
  • ½ teaspoon dried rosemary
  • ½ teaspoon salt
  • freshly ground black pepper (to taste)

Instruction

  • Combine marinade in ingredients in a small bowl.
  • Place chicken pieces inside a gallon size plastic storage bad and add marinade. Seal bag and turn it over a few times to distribute marinade. Refrigerate chicken for several hours.
  • Grill over medium heat until chicken is thoroughly cooked (see Notes below).
  • If grilling boneless breast, slice it and garnish with chopped fresh parsley, if desired.
