Ingredients

The following ingredients have 2 Servings
  • 1.5 lbs to 2 chicken drumsticks
  • 1/3 cup balsamic vinegar
  • 1/4 cup coconut aminos
  • 2 tablespoons coconut sugar
  • 3 cloves garlic (minced)
  • 2 tsp fresh ginger (grated on a microplane)
  • 1/2 tsp cassava flour or arrowroot starch
  • Optional topping: Chopped green onion

Instruction

  • Preheat oven to 450 degrees fahrenheit and line a baking pan with parchment paper* or foil. *(Some parchment paper shouldn't be used for high-heat cooking. Be sure to check the packaging for any heat limits when using parchment paper).
  • Place drumsticks on the baking pan and place in the oven to bake for 35 minutes, until browned and slightly crispy on the outside.
  • While the chicken is cooking, make your sauce by adding all remaining ingredients to a small sauce pan and mixing well. Heat to a low boil and then turn down the heat to simmer for 4-5 minutes, stirring frequently until the sauce is slightly thickened. Remove from heat and the sauce will continue to thicken a bit as it sits.
  • When the chicken has baked for 35 minutes, remove it from the oven and brush on both sides with the sauce. Return to the oven to bake for another 5 minutes and then remove. Allow to cool for a few minutes and serve.
