- Three (28-oz) cans crushed tomatoes
- Water
- 1 tablespoon dried oregano
- 1 teaspoon granulated sugar
- Kosher salt
- 5 fresh basil leaves
- 2 tablespoons olive oil
- 1 medium (8 oz) onion (peeled and diced)
- 1 medium (5 oz) bell pepper (seeded and thinly sliced)
- 10 ounces pancetta or bacon
- 12 ounces fresh Italian sausages (casings removed)
- 1 garlic clove (peeled and finely sliced)
- 2 tablespoons dried oregano
- Salt and freshly ground black pepper
- 1 pound ziti pasta
- 7 ounces pepperoni (salami, mortadella, ham, or other cured meat, sliced)
- 3 cups tomato sauce (see preceding recipe)
- 1 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
