Ingredients
The following ingredients have 2 Servings
- Whole Red snapper- 2
- Lemon juice- 2 lemon (save the pith)
- Lemon slices- 6
- Minced garlic- 3 tblspn
- Sea food seasoning: 1 tbsp.
- Fresh thyme sprigs- 2-3 or chopped coriander
- Olive Oil- 1 tblspn
- Butter- 1 tblspn
- Rock salt- 2 tspn
Instruction
- Wash the fish in running water specially the belly and the head. Pat dry. Make vertical gashes on both sides of the fish.
- Prepare the marinade with lime juice, Seafood seasoning, 2 tblspn of minced garlic, salt and oil. Fill the gashes with the marinade nicely on both the sides. Put in the lemon pith, thyme and spoon the marinate inside the belle.
- If you have fresh thyme then place it or spread the dry thyme over the fish. Arrange the lemon slices over the fish. Place the fish over a silver foil. Fold it from all sides and make a packet.
- Pre heat the oven at 200degrees Celsius. Bake the fish for 20 mins in 180degrees. Fish will release its juices and will be cooked. Open the packet. Fish will be flaky. Its cooked.
- Warm the butter and 1 tspn oil in pan. switch of the gas. Pour lemon juice over it. It will sizzle so cover it.
- Plate the fish and pour the sauce over it. Garnish with chopped cilantro/coriander leaves.
