Ingredients
The following ingredients have 4 Servings
- 4 tilapia filets
- 2 tablespoons extra virgin olive oil
- 2 mangos (ripe, peeled and diced)
- 1 red onion (small, diced)
- 1 tomato (medium, seeded and diced)
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1 lime (juiced)
- salt and pepper (to taste)
- cilantro (fresh chopped, for serving)
Instruction
- Preheat oven to 350 degrees F. Season the fish filets with salt and pepper and drizzle with the olive oil. Bake for 8 to 12 minutes, until fish flakes easily with a fork.
- While the fish is baking, make the salsa by combining the remaining ingredients. Season with salt and pepper.
- To serve, top the fish with the salsa, Greek yogurt and fresh chopped cilantro.
