Ingredients

The following ingredients have 11 Servings
  • 2 large sweet potatoes or yams about 1 lb.
  • 2/3 cup Parmesan cheese grated
  • 1/2 cup scallions thinly sliced
  • 1/2 cup eggs about 2 eggs, beaten or egg substitute
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • Non-Stick Cooking Spray

Instruction

  • Pre-heat oven to 425 degrees
  • Wash and peel sweet potatoes. Using box grater or food processor, grate into medium bowl
  • When finished grating potatoes, add beaten eggs, cheese, scallions, cayenne and salt and mix with spatula.
  • Line a large baking sheet with parchment paper. Using an ice cream scoop, scoop out sweet potato fritter mixture and place evenly on baking sheet.Spray the top of each fritter with non-stick cooking spray to help them brown in the oven.
  • Bake for 20-25 minutes until crisp and golden.
  • Serve with Smokey Garlic Dipping Sauce.
