Ingredients

The following ingredients have 4 Servings
  • 4 salmon fillets
  • 1 tsp. ground cumin
  • 1 tsp. paprika
  • 1 tsp. onion powder
  • 1/2 tsp. chili powder
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • Sea salt and freshly ground black pepper
  • 2 avocados (ripe, peeled, and diced)
  • 1 plum tomato (seeded and chopped)
  • 1/2 red onion (minced)
  • 4 bacon strips (cooked and chopped)
  • 1 tbsp. fresh lime or lemon juice
  • 1/2 tsp. ground cumin
  • Sea salt and freshly ground black pepper

Instruction

  • Preheat oven to 400 F.
  • In a bowl, combine the cumin, paprika, onion powder, and chili powder; season to taste with salt and pepper.
  • Brush the salmon fillets with olive oil and lemon juice.
  • Sprinkle the salmon fillets with the spice mixture and place them in a baking dish.
  • Cook in the oven for 12 to 15 minutes.
  • In a bowl, combine the ingredients for the bacon-avocado salsa.
  • Season the salsa with salt and pepper to taste and gently toss until well-mixed.
  • Serve the fish topped with the bacon-avocado salsa.
