Ingredients
The following ingredients have 4 Servings
- 4 salmon fillets
- 1 tsp. ground cumin
- 1 tsp. paprika
- 1 tsp. onion powder
- 1/2 tsp. chili powder
- 2 tbsp. lemon juice
- 2 tbsp. olive oil
- Sea salt and freshly ground black pepper
- 2 avocados (ripe, peeled, and diced)
- 1 plum tomato (seeded and chopped)
- 1/2 red onion (minced)
- 4 bacon strips (cooked and chopped)
- 1 tbsp. fresh lime or lemon juice
- 1/2 tsp. ground cumin
- Sea salt and freshly ground black pepper
Instruction
- Preheat oven to 400 F.
- In a bowl, combine the cumin, paprika, onion powder, and chili powder; season to taste with salt and pepper.
- Brush the salmon fillets with olive oil and lemon juice.
- Sprinkle the salmon fillets with the spice mixture and place them in a baking dish.
- Cook in the oven for 12 to 15 minutes.
- In a bowl, combine the ingredients for the bacon-avocado salsa.
- Season the salsa with salt and pepper to taste and gently toss until well-mixed.
- Serve the fish topped with the bacon-avocado salsa.
