Ingredients

The following ingredients have 4 Servings
  • 1 lb. Penne Pasta
  • 1 tbsp. Extra Virgin Olive Oil
  • 6 links Sweet Italian Sausage
  • 10 oz. Sliced White Mushrooms
  • 3 c. Prepared Marinara Sauce
  • 1/4 c. Dry Red Wine
  • 2 c. Shredded Mozzarella ; divided

Instruction

  • Heat the oil in a large, nonstick saute pan over medium heat.
  • Remove the casings from the sausage and add to the pan. Crumble the meat and allow to brown for 5-7 minutes.
  • Next, add the sliced mushrooms and saute for 4-5 minutes until softened; then add the marinara sauce and red wine.
  • Reduce heat to low and simmer for 15 minutes.
  • Preheat oven to 350 degrees F.
  • Prepare pasta according to package directions; however, reduce cooking time by 3-4 minutes so that the pasta is al dente and not too soft. Drain.
  • Add the pasta back to the pot along with the sauce and 1 cup of the mozzarella cheese. Mix well.
  • Place the penne in an oven safe, 13x9 (3 qt) casserole dish, top with remaining cheese and bake for 25-30 minutes or until cheese is melted and bubbly.
