Ingredients

The following ingredients have 6 Servings
  • 2 tablespoons parsley (fresh, chopped)
  • 1 garlic clove
  • 1/2 cup Parmesan cheese (fat free)
  • 1 teaspoon oregano (dried)
  • 1 teaspoon basil (dried)
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper
  • 1.5 lbs. chicken breast (boneless/skinless, raw)
  • 1/4 cup egg whites
  • 2 teaspoon extra virgin olive oil

Instruction

  • Preheat oven to 375°F. Wash and mince parsley; peel and mince garlic.
  • Combine parsley, garlic, Parmesan cheese, oregano, basil, black pepper and red pepper in a pie pan or shallow dish.
  • Dip chicken pieces into beaten egg whites and then into cheese mixture.
  • Place chicken in a shallow baking pan lightly coated with cooking spray.
  • Drizzle olive oil over chicken, and sprinkle with any remaining cheese mixture.
  • Bake for 25 minutes or until tender and no longer pink inside.
  • Serve immediately with a tossed salad, steamed broccoli and herb roasted potato wedges, if desired.
