- 1 1/2 teaspoons lemon zest ((zest of half a lemon))
- 1/2 teaspoon lemon juice
- 2/3 cup all-purpose flour
- 1/3 cup whole wheat flour
- 2 tablespoons granulated sugar
- 2 teaspoons crystallized ginger, (minced)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 1/8 teaspoon freshly grated nutmeg
- 1/8 teaspoon ground cloves
- 1/2 cup buttermilk ((or 1/4 cup milk + 1/4 cup greek yogurt))
- 1/4 cup vegetable oil
- 3 tablespoons molasses
- 1 egg ((large))
- 1 tablespoon grated fresh ginger
- 1 teaspoon vanilla extract
