  • 1 1/2 teaspoons lemon zest ((zest of half a lemon))
  • 1/2 teaspoon lemon juice
  • 2/3 cup all-purpose flour
  • 1/3 cup whole wheat flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons crystallized ginger, (minced)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon freshly grated nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 cup buttermilk ((or 1/4 cup milk + 1/4 cup greek yogurt))
  • 1/4 cup vegetable oil
  • 3 tablespoons molasses
  • 1 egg ((large))
  • 1 tablespoon grated fresh ginger
  • 1 teaspoon vanilla extract
