Ingredients

The following ingredients have 4 Servings
  • 2 lbs. boneless skinless chicken thighs
  • 2 zucchini (sliced)
  • 1 onion (sliced)
  • 12 cherry tomatoes
  • 1 cup tomato sauce
  • 1 cup vegetable broth
  • 1 tbsp. garlic powder.
  • 1 tbsp. dried oregano
  • Sea salt and freshly ground black pepper

Instruction

  • Preheat your oven to 375 F.
  • Season each chicken thigh with sea salt, black pepper, oregano, and garlic powder.
  • In a bowl, combine the tomato sauce and the vegetable broth.
  • Place chicken in a baking dish, and top with the zucchini and tomatoes.
  • Pour the tomato sauce mixture over everything.
  • Place in the oven and bake for 45 to 50 minutes, or until the chicken is cooked through.
