Ingredients

The following ingredients have 4 Servings
  • 3 lb skin-on bone-in chicken thighs (about 6-8)
  • 2 Tbsp olive oil
  • 1 tsp sea salt
  • ½ tsp ground black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ¼ tsp chili powder
  • 1 tsp onion powder

Instruction

  • Preheat the oven to 400 degrees F. Line a large baking sheet with foil for easy clean up. Set aside.
  • In a small bowl combine all the rub ingredients. Set aside.
  • Pat chicken thighs dry with a paper towel. Place on the prepared baking sheet. Drizzle thighs with olive oil, rubbing the oil into the chicken to coat.
  • Sprinkle rub mixture evenly over the chicken thighs. Turn the thighs over and evenly sprinkle remaining seasoning mixture on top. Make sure chicken thighs are skin-side up.
  • Place the baking sheet in a preheated oven at 400 degrees F for 35-45 minutes or until the internal temperature is 165 degrees F.
  • Remove from oven let rest for 5 minutes and serve.
