Ingredients

The following ingredients have 4 Servings
  • 1 teaspoon olive oil
  • 1 pound chicken breast cutlets {4- 4 ounce pieces}
  • 1/3 cup Italian breadcrumbs
  • 1/3 cup shredded parmesan cheese
  • 1 egg
  • pinch of salt and freshly ground pepper
  • 1/2 cup tomato sauce
  • 1/2 cup part skim mozzarella
  • 1 small spaghetti squash

Instruction

  • To prepare chicken parm:
  • Preheat oven to 425 degrees F.
  • Drizzle 9X13 inch baking dish with olive oil.
  • In shallow dish, combine breadcrumbs and parmesan cheese.
  • In small bowl, whisk egg and season with salt and pepper.
  • Coat each chicken breast in egg wash and smother in parmesan breadcrumbs.
  • Place chicken in prepared baking dish and lightly mist or drizzle tops of chicken with olive oil
  • Bake chicken for 12 minutes; remove from oven.
  • Turn oven temperature to broil.
  • Pour tomato sauce around sides of chicken and sprinkle chicken with mozzarella.
  • Place chicken back in oven for 3 minutes.
  • To prepare spaghetti squash:
  • Pearce holes in spaghetti squash with a fork.
  • Place spaghetti squash in a microwave safe bowl, and cook on high in microwave for 10 minutes.
  • Allow squash to cool, and slice in half from stem to end.
  • Using a fork, scrape inside of squash from stem to end and gather the spaghetti-like strands in a bowl. Season with salt and pepper.
  • Serve immediately.
