Ingredients

The following ingredients have 4 Servings
  • 1 - 8-inch wheel of Brie
  • 1/4 cup(s) dried cherries or apricots
  • 1/4 cup(s) sliced almonds
  • 3 tablespoon(s) brown sugar
  • 2 - sheets of puff pastry
  • 2 - eggs, beaten

Instruction

  • Preheat oven to 400 degrees.
  • Using a warmed sharp knife, cut the wheel of Brie in half horizontally and separate the top half from the bottom half. Sprinkle the bottom half of the Brie with the dried fruit, toasted almonds, and brown sugar. Replace the top half of the Brie and apply pressure to secure the stuffing.
  • Working on a floured surface, roll out the puff pastry so it will fully cover the Brie. Place the Brie on the puff pastry and pull up the sides around the Brie wheel. Roll out another sheet of puff pastry and cut out a circle to cover the top of the Brie. You can use the trimmings for decorations if you wish.
  • Using a pastry brush, brush the top of the Brie with egg wash and place the puff pastry circle on top.
  • Place on a cookie sheet lined with parchment paper. Bake for 20-30 minutes until the puff pastry is golden brown and then turn the oven down to 325 degrees. Bake for another 20 minutes.
  • Serve on a pretty platter with crackers.
