Ingredients
The following ingredients have 4 Servings
- 12 hard taco shells
- 1 tablespoon olive oil
- 1/3 cup chopped red onion
- 1 clove garlic, (minced)
- 3 cups shredded rotisserie chicken
- 1/2 cup BBQ sauce, (can use store bought)
- 2 cups shredded Mexican blend cheese, (divided)
- 1 tablespoon cilantro
- Finely shredded purple cabbage
- Corn Salsa
- Avocado
- Fresh cilantro
Instruction
- Preheat oven to 400 degrees F. Line a 9x13-inch baking dish with parchment paper or grease with nonstick cooking spray. Place the taco shells in the prepared pan, standing up. Bake for 5 minutes so the shells can crisp up. Remove from the oven and set aside.
- In a large skillet, heat the olive oil over medium-high heat. Add the onion and cook for 3 minutes or until softened. Add the garlic and cook for one minute.
- Add the chicken and BBQ sauce and stir until the chicken is well coated in the sauce. Remove the skillet from the heat. Stir in 1 cup of the shredded cheese and the cilantro.
- Spoon the chicken mixture evenly into the shells. Sprinkle the remaining cheese on top of the tacos. You can prop them up against each other so they stand up.
- Bake for 7 to 10 minutes or until cheese is melted. Remove from the oven and top with cabbage, corn salsa, avocado or your favorite taco toppings!
