Ingredients

The following ingredients have 4 Servings
  • 1 pork tenderloin (1 lb.), cut into 4 pieces
  • 4 slices OSCAR MAYER Bacon
  • 1/4 cup KRAFT Zesty Italian Dressing
  • 1 mango, chopped
  • 1/2 cup finely chopped red peppers
  • 1 green onion, finely chopped
  • 1 Tbsp. chopped fresh cilantro
  • 1 Tbsp. fresh lime juice

Instruction

  • Press each meat piece into 3-1/2-inch medallion. Wrap bacon slice around edge of each medallion, secure with wooden toothpicks.
  • Heat large heavy skillet sprayed with cooking spray on high heat. Add meat; cook on medium-high heat 5 min. on each side or until done (145ºF). Meanwhile, combine remaining ingredients.
  • Remove and discard toothpicks from meat. Let meat stand 3 min. Serve topped with mango mixture.
