Ingredients
The following ingredients have 7 Servings
- 1 package(s) boneless pork loin (4-6 lbs)
- 4-6 slice(s) bacon
- RUB MIXTURE
- 1 teaspoon(s) chili powder
- 1/2 teaspoon(s) paprika
- 1 1/2 teaspoon(s) salt
- 1/2 teaspoon(s) black pepper, coarse ground
- 1/2 teaspoon(s) cumin (ground)
- 1 teaspoon(s) cinnamon (ground) or 1/2 tsp depending on preference
- GLAZE
- 1 cup(s) light brown sugar, packed
- 2 tablespoon(s) flour
- 2 tablespoon(s) apple cider vinegar
- 1/2 teaspoon(s) dry mustard
Instruction
- Preheat oven to 350F.
- Place pork loin in a roasting pan. Combine the RUB ingredients and rub over the pork. NOTE* My husband prefers less cinnamon.
- Cut each strip of bacon in half crosswise and lay them over the pork loin. Roast (uncovered) for about 1 1/2 to 2 hours, or until pork reaches 150 degrees.
- Make glaze after baking pork loin to 150 degrees. Combine the brown sugar, flour, cider vinegar and dry mustard in a saucepan. Bring to a simmer and simmer for about a minute and one-half. Pour over the pork and return to oven. Roast for about 15 to 20 minutes longer, or until pork registers 160 degrees. NOTE: I bought one with a pop-up timer.
