Ingredients

The following ingredients have 4 Servings
  • 2 medium onions (you’re gonna make normal Paleo onion rings too, because how much time and bacon do you have??)
  • bacon – as much as you want (average 1 strip per ring) *thin-sliced is best for wrapping
  • coconut oil, lard, or oil of choice for deep frying (enough to easily cover rings)
  • 1 cup tapioca flour
  • 3 tsp paprika
  • 1/4-1/2 tsp cayenne
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 egg

Instruction

  • In a heavy-bottom pot, heat oil to medium-high heat (around 350-375 F). Remember that the temperature will drop when food is added.
  • Cut onions horizontally to form rings.
  • Separate larger rings (put the middle of onions aside for use in other recipes).
  • Beat egg in a mixing bowl.
  • Combine all dry ingredients together in another mixing bowl.
  • Dip rings individually in the egg.
  • Dredge ring in tapioca mixture.
  • Gently drop into hot oil (careful not to splash and burn yourself).
  • Cook only long enough for the batter to solidify (30 seconds-ish?).
  • Remove using a slotted spoon and allow to drip on paper towel or newspapers.
  • When cool enough to handle, carefully wrap with bacon.
  • Secure with wooden skewers or tooth pics (2-3 in each depending on size – see photos).
  • Return to hot oil until bacon is cooked (watch closely for the desired doneness. Time will vary with the temperature of oil and bacon thickness. Maybe 1-2 minutes?)
  • Again remove with slotted spoon and allow to drip on paper towel or newspaper.
  • Remove skewers or toothpicks.
  • Serve hot. Great with Paleo Ranch Sauce, garlic chili sauce, and others.
