Ingredients

The following ingredients have 24 Servings
  • 8 ounces cream cheese, softened
  • 4 ounces goat cheese, crumbled
  • 2 tablespoons minced herbs, (I used basil, chives, thyme & rosemary)*
  • 1 clove garlic, crushed
  • 2 pieces of bacon, cooked and crumbed
  • 1/2 cup of pecan, chopped finely

Instruction

  • In a medium mixing bowl add the cheeses, garlic and herbs and mix well with a fork or mixing spoon. Note you could also use a food processor or hand mixer but that is more mess than it's worth in my opinion.
  • Using a spoon, for the goat cheese mixture into a ball in the bowl. The scoop the ball onto a piece of plastic wrap. You can use this to better form into a ball without getting your hands dirty.
  • Add the crumbled bacon and chopped pecans to a bowl larger than then cheeseball and mix well.
  • Put the cheeseball into the bacon pecan mixture and roll around until it's covered in nuts and bacon.
  • Place plastic wrap over the cheese ball and refrigerate until ready to use. Make sure to let it come to room temperature before serving though.
  • Serve with cucumbers or low carb crackers. Store leftovers in an airtight container and refrigerate.
