  • 3 ounces sharp cheddar cheese, (grated (1 cup packed))
  • 1 tablespoon chopped chives, (divided)
  • 3 large eggs
  • 1 1/2 cups half-and-half ((or 3/4 cup heavy cream + 3/4 cup whole milk))
