Ingredients
The following ingredients have 6 Servings
- 12 ounces fusili pasta
- 4 slices bacon (diced)
- 2 avocados (halved, seeded, peeled and diced)
- 2 Roma tomatoes (diced)
- 1/3 cup diced red onion
- 1/4 cup basil leaves (chiffonade)
- 1/4 cup grated Parmesan cheese
- 1/4 cup olive oil
- 2 tablespoons freshly squeezed lemon juice (or more, to taste)
- 1 tablespoon lemon zest
- Kosher salt and freshly ground black pepper (to taste)
Instruction
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
- Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
- In a large bowl, combine pasta, bacon, avocado, tomatoes, onion and basil. Stir in Parmesan, olive oil, lemon juice, lemon zest, salt and pepper, to taste.
- Serve hot or cold, garnished with Parmesan, if desired.
