Ingredients

The following ingredients have 6 Servings
  • 12 ounces fusili pasta
  • 4 slices bacon (diced)
  • 2 avocados (halved, seeded, peeled and diced)
  • 2 Roma tomatoes (diced)
  • 1/3 cup diced red onion
  • 1/4 cup basil leaves (chiffonade)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tablespoons freshly squeezed lemon juice (or more, to taste)
  • 1 tablespoon lemon zest
  • Kosher salt and freshly ground black pepper (to taste)

Instruction

  • In a large pot of boiling salted water, cook pasta according to package instructions; drain well.
  • Heat a large skillet over medium high heat. Add bacon and cook until brown and crispy, about 6-8 minutes. Transfer to a paper towel-lined plate.
  • In a large bowl, combine pasta, bacon, avocado, tomatoes, onion and basil. Stir in Parmesan, olive oil, lemon juice, lemon zest, salt and pepper, to taste.
  • Serve hot or cold, garnished with Parmesan, if desired.
