- 5 spring onions
- 1 packet fresh baby corn cut in half lengthways (you can substitute one
- small tin of baby corn)
- 1 clove garlic
- 1 small piece ginger
- 3 tbsp peanut oil
- small handful snow peas
- 2 tbsp soy sauce
- 1 tbsp chilli sauce
- about half a packet tofu, cut in squares*
- *tofu is sold in packets of about 300g - use as much or as little as you like.
Instruction
- <p>Cut the spring onions into short lengths. If you are using fresh baby corn, microwave or steam for a few minutes until cooked.</p> <p>Crush or roughly chop the garlic and ginger.</p> <p>Heat a wok until very hot, add the peanut oil and the ginger and garlic. Stir, then add the spring onions and snow peas. Cook for a minute before adding the baby corn and the soy and chilli sauce.</p> <p>When the vegetables are cooked through, toss in the tofu and serve.</p>
