Ingredients

The following ingredients have 2 Servings
  • 1 slab Pork Spare Ribs
  • 1/4 cup BBQ Pork Ribs Rub ((see recipe below))
  • 2 cups Homemade Carolina Barbecue Sauce ((see recipe))
  • 8 ounces Paprika
  • 4 ounces White Sugar
  • 2 ounces Granulated Onion Powder

Instruction

  • Remove membrane from back part of ribs.
  • If using Spare Ribs, trim off the solid piece of meat at the top, making this slab of ribs St. Louis Style). Use the chunk of meat in a different recipe to make rib tips.
  • Massage ribs with BBQ Rib Rub and wrap with Saran Wrap.  
  • Place in refrigerator overnight or for at least two hours.
  • Prepare the Homemade Carolina Barbecue Sauce in your small slow cooker about 5-6 hours prior to lighting the grill.
  • Prepare grill for indirect cooking by lighting charcoal and only using one section of the grill.
  • Place ribs, curl side up on the opposite section of the grill where the charcoal is burning.
  • Cook for 2.5 hours (1.5 hours if using Baby Back Ribs).
  • Turn ribs and cook for 1 hour more, or until the bone wiggles.
  • Cut ribs between the bones and serve with Carolina Style Barbecue Sauce.
