- CAKE:
- 1 1/2 cup(s) mashed, ripe bananas
- 2 teaspoon(s) lemon juice
- 3 cup(s) flour
- 1 1/2 teaspoon(s) baking soda
- 1/2 teaspoon(s) salt
- 3/4 cup(s) butter, softened
- 2 1/8 cup(s) sugar
- 3 large eggs
- 2 teaspoon(s) vanilla
- 1 1/2 cup(s) buttermilk
- FROSTING:
- 1/2 cup(s) butter, softened
- 1 - 8 oz. pkg. cream cheese
- 1 pinch(es) salt
- 1 teaspoon(s) vanilla
- 3 1/2 cup(s) powdered sugar
- - chopped walnuts to garnish, optional
Instruction
- Preheat oven to 275 degrees. Grease a 9"x13" pan. Mix mashed banana with lemon juice and set aside.
- In medium bowl, blend flour, baking soda and salt and set aside.
- In large bowl, cream 3/4 cup butter and 2 1/8 cups sugar until light and fluffy. Beat in eggs, one at a time. Add vanilla. Start to mix in the flour mixture alternately with the buttermilk. Stir in the banana mixture by hand.
- Pour into prepared pan and bake for 50-60 minutes or until a toothpick comes out clean. Do not over-bake. Remove from oven and place directly into the freezer for 45 minutes. (Don't skip this step... this is important.)
- For frosting, cream butter and cream cheese . Add remaining ingredients and beat on high until light and fluffy. Spread on cooled cake. Garnish with chopped nuts, if desired.
