Ingredients

The following ingredients have 5 Servings
  • 2 large eggs (separated)
  • 2 cups all-purpose flour
  • Pinch of salt
  • 1 Tbsp baking Powder
  • 1 large avocado (soft and ripen then mashed)
  • 1/3 cup cooking oil (such as Avocado oil)
  • 2 5.3 oz cup Silk Dairy-Free Yogurt Alternative (any flavor you want. I used vanilla)
  • Maple syrup
  • Fresh fruit
  • Silk Dairy-Free Yogurt Alternative

Instruction

  • Separate the egg yolks from the whites. Place the egg whites in the mixer bowl and whip on high speed until the egg whites are stiff. About 2 minutes (depending on your mixer)
  • Preheat your waffle iron. Place the egg yolks, salt, and baking powder in a large mixing bowl. Stir to mix everything. Add in the yogurt and avocado and stir just until combined. Fold in 1/3 of the whipped egg into the batter. Slice down through the middle with your rubber spatula, scoop from the bottom of the bowl, and fold over on top. Repeat until the egg whites and the batter is incorporated. Continue with the next 1/3 of the egg whites into the batter and repeat the process until all are mixed
  • Spray the waffle iron with non-stick cooking spray. Pour in about 3/4 cup (or more) of the batter (amount depends on the size of your waffle iron) into the waffle maker. Close and cook until they are golden brown. Carefully remove from the waffle maker and repeat the process
