Ingredients
The following ingredients have 6 Servings
- 1 large avocado (diced)
- 1 cup cherry tomatoes (sliced crosswise)
- 1 ear corn (cooked, kernels removed)
- 1/3 cup red onion (finely diced)
- 1/3 cup cilantro (finely chopped)
- 1/2 jalapeño (seeded and minced)
- 1 lime (juiced)
- kosher salt (to taste)
- freshly ground black pepper (to taste)
Instruction
- Combine the avocados, tomatoes, corn, red onion, cilantro and jalapeño in a bowl.
- Add the lime juice, and season to taste with salt and pepper. Gently stir to combine.
- Enjoy on its own or as a side to your favorite meal!
