Ingredients

The following ingredients have 4 Servings
  • 3 cups avocado (about 3 large avocados)
  • 1/3 cup maple syrup
  • 1/3 cup cocoa powder (unsweetened)
  • 1/4 cup plant-based milk (such as almond milk, cashew milk or coconut milk)
  • 2 teaspoons vanilla paste (or vanilla extract)
  • 1/8 teaspoon pink Himalayan salt
  • 3/4 cup chocolate chips (or vegan chocolate chunks)
  • whipped cream (for topping (such as Truwhip))

Instruction

  • Peel the skins from the avocado and remove the seed.
  • Blend together avocados, cocoa powder, maple syrup, plant-based milk, vanilla extract, and a dash of in a food processor or blender until smooth.
  • In a small microwavable bowl, heat the chocolate chips (or chocolate chunks) in the microwave for about 1 minute and stir until smooth and melted. Pour in melted chocolate chips and blend again until smooth. Refrigerate the pudding until it is chilled, about 30 minutes to 1 hour. Top with whipped cream right before serving.
