Ingredients

- 1/2 tbsp butter
- 3 eggs, whisked
- salt
- freshly ground pepper
- 2 oz chèvre (goat cheese), crumbled
- 2 strips thick cut bacon, cooked until crisp and roughly cut
- 1/2 avocado
- microgreens for garnish
Instruction
- In a 8” fry pan, melt butter over medium/low heat and swirl to coat bottom
- Slowly pour the eggs into the pan
- Sprinkle with a pinch of salt and freshly ground pepper and allow to cook until eggs are almost set
- About 2-3 minutes
- Using a large spatula, carefully flip the eggs and remove from heat
- On one half of the eggs add goat cheese, bacon and avocado
- Fold in half and serve with microgreens.
