Ingredients

The following ingredients have 4 Servings
  • 3 Tbsp Pure Blend’s Avocado Oil plant-based butter
  • 1 avocado
  • 1/4 tsp sea salt
  • 1/8 tsp onion powder
  • 1/8 tsp garlic powder
  • 2 tsp lime juice
  • 2 roma tomatoes (seeded and diced)
  • 1 jalapeno (seeded, membrane removed, diced)
  • 2 corn cobs
  • 1/2 lime (juiced)
  • 1 clove garlic (minced)
  • 1/8 tsp sea salt
  • 1/2 c. red onion (minced)
  • 4 pieces bread (toasted)

Instruction

  • On a preheat grill or grill pan over medium heat on the stove char corn on the cob, rotating to char all sides. Remove and cut corn off of cob.  
  • In a medium sized bowl combine corn kernels, diced roma tomatoes, diced jalapeno, lime juice, minced garlic, sea salt, and minced red onion. Mix well and set aside.
  • Peel and pit avocado and place in bowl. Add Pure Blends Avocado Oil Butter, seas salt, onion powder, garlic powder and lime juice. Either mash with a fork or immersion blender until smooth and creamy. You can also do this in a food processor. 
  • Spread avocado butter over pieces of toast and top with grilled corn salsa. Serve immediately.
