Ingredients
The following ingredients have 4 Servings
- 3 Tbsp Pure Blend’s Avocado Oil plant-based butter
- 1 avocado
- 1/4 tsp sea salt
- 1/8 tsp onion powder
- 1/8 tsp garlic powder
- 2 tsp lime juice
- 2 roma tomatoes (seeded and diced)
- 1 jalapeno (seeded, membrane removed, diced)
- 2 corn cobs
- 1/2 lime (juiced)
- 1 clove garlic (minced)
- 1/8 tsp sea salt
- 1/2 c. red onion (minced)
- 4 pieces bread (toasted)
Instruction
- On a preheat grill or grill pan over medium heat on the stove char corn on the cob, rotating to char all sides. Remove and cut corn off of cob.
- In a medium sized bowl combine corn kernels, diced roma tomatoes, diced jalapeno, lime juice, minced garlic, sea salt, and minced red onion. Mix well and set aside.
- Peel and pit avocado and place in bowl. Add Pure Blends Avocado Oil Butter, seas salt, onion powder, garlic powder and lime juice. Either mash with a fork or immersion blender until smooth and creamy. You can also do this in a food processor.
- Spread avocado butter over pieces of toast and top with grilled corn salsa. Serve immediately.
