Ingredients
The following ingredients have 4 Servings
- 8 oz. chorizo
- 4 slices multigrain bread
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic (sliced in half crosswise)
- 1 avocado
- 4 lime wedges
- 2 tablespoons chopped fresh cilantro
- kosher salt (to taste)
- black pepper (to taste)
- Extra cilantro and lime wedges for serving (optional)
Instruction
- Cook the chorizo in a skillet until browned and fully cooked.
- Meanwhile, toast the bread in a toaster.
- As soon as the bread comes out of the toaster while it's still warm, drizzle each with an equal portion of the olive oil and rub the cut side of the garlic onto each oiled piece.
- Using a fork, mash 1/4 of the avocado on top of each piece of toast.
- Top the avocado with a squeeze of lime juice, salt, pepper, and fresh cilantro.
- Distribute the cooked chorizo evenly on top of the avocado toasts.
- Serve with extra cilantro and lime wedges, if desired.
