Ingredients

The following ingredients have 12 Servings
  • 2 cups demerara sugar (or light brown sugar)
  • 1 1/2 cups sunflower oil (or any vegetable oil)
  • 3 cups freshly grated carrots
  • 1 cup chopped nuts (we used almonds and walnuts)
  • 4 organic, free-range eggs
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp Allspice
  • 1/4 tsp cardamom
  • 1/4 tsp ground ginger
  • 1/2 tsp nutmeg
  • 1 cup shredded coconut, unsweetened
  • 2 1/2 cups organic, unbleached all-purpose flour
  • 1-8 oz package cream cheese
  • 1/2 cup butter
  • 2 tsp Maple syrup
  • 1/2 cup icing sugar
  • 1/2 cup granulated sugar, melted slowly
