The following ingredients have 12 Servings
- 2 cups demerara sugar (or light brown sugar)
- 1 1/2 cups sunflower oil (or any vegetable oil)
- 3 cups freshly grated carrots
- 1 cup chopped nuts (we used almonds and walnuts)
- 4 organic, free-range eggs
- 2 tsp baking powder
- 1 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- 1/2 tsp Allspice
- 1/4 tsp cardamom
- 1/4 tsp ground ginger
- 1/2 tsp nutmeg
- 1 cup shredded coconut, unsweetened
- 2 1/2 cups organic, unbleached all-purpose flour
- 1-8 oz package cream cheese
- 1/2 cup butter
- 2 tsp Maple syrup
- 1/2 cup icing sugar
- 1/2 cup granulated sugar, melted slowly
