Ingredients

The following ingredients have 4 Servings
  • 2 Tbsps Avocado oil
  • 1 large, red chili pepper (finely chopped)
  • 1 clove garlic cloves (finely chopped)
  • 12 ozs Asparagus (woody ends removed)
  • 1.5 cups Snap pea
  • 1 cup fresh green pea
  • 1 head Broccoli (prepared into florets)
  • 3 cups extra firm Tofu (cubed)
  • 2 Tbsps low-sodium soy sauce
  • 2 Tbsps Sesame seeds

Instruction

  • Heat a tablespoon of the oil in a large wok set over a high heat until hot. Add the chilli, garlic, and a pinch of salt and pepper.
  • Stir-fry for 30 seconds, and then add the asparagus, mange tout, broccoli, and petit pois. Cover the wok with a lid and continue to cook over a slightly reduced heat for 3 - 4 minutes until the vegetables are tender.
  • Add the soy sauce and adjust the seasoning to taste. Set the vegetables aside and preheat the grill to hot.
  • Toss the cubed tofu with the remaining oil and some salt and pepper. Grill for 4 - 5 minutes until golden and crisp, turning occasionally.
  • Toss the tofu with the vegetables. Spoon into bowls and serve with chopsticks.
