Ingredients
The following ingredients have 4 Servings
- 2 Tbsps Avocado oil
- 1 large, red chili pepper (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 12 ozs Asparagus (woody ends removed)
- 1.5 cups Snap pea
- 1 cup fresh green pea
- 1 head Broccoli (prepared into florets)
- 3 cups extra firm Tofu (cubed)
- 2 Tbsps low-sodium soy sauce
- 2 Tbsps Sesame seeds
Instruction
- Heat a tablespoon of the oil in a large wok set over a high heat until hot. Add the chilli, garlic, and a pinch of salt and pepper.
- Stir-fry for 30 seconds, and then add the asparagus, mange tout, broccoli, and petit pois. Cover the wok with a lid and continue to cook over a slightly reduced heat for 3 - 4 minutes until the vegetables are tender.
- Add the soy sauce and adjust the seasoning to taste. Set the vegetables aside and preheat the grill to hot.
- Toss the cubed tofu with the remaining oil and some salt and pepper. Grill for 4 - 5 minutes until golden and crisp, turning occasionally.
- Toss the tofu with the vegetables. Spoon into bowls and serve with chopsticks.
