Ingredients

The following ingredients have 4 Servings
  • 2 tablespoons olive oil
  • 1 onion, finely diced
  • 1 yellow or orange bell pepper, seeded and diced
  • 1 head cauliflower, chopped in food processor until it resembles rice
  • 2 teaspoons fresh ginger, minced
  • 3 cups fresh spinach, roughly chopped
  • 1 cup shelled edamame
  • 3 tablespoons low sodium soy sauce
  • 1/2 teaspoon kosher salt
  • 2 scallions, chopped

Instruction

  • Heat a large wok or sauté pan over medium heat, add oil and sauté onion and ginger for 1 minute. Add bell pepper and cook for 1 minute.
  • Add cauliflower and cook for an additional 2-3 minutes. Add spinach, edamame, soy sauce and salt. Cook for 3-4 minutes or until cauliflower is tender.
  • Top with chopped scallions and serve.
