Ingredients

The following ingredients have 5 Servings
  • 1 tablespoon olive oil
  • 4 boneless and skinless chicken breasts (sliced)
  • 1 onion (small, sliced)
  • 1 red pepper (sliced)
  • 1 green pepper (sliced)
  • 2 mangoes (peeled and sliced)
  • 1 teaspoon ground ginger
  • 2 tablespoons chicken stock (low-sodium)
  • 2 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon orange juice (pulp-free)
  • 2 tablespoons cornstarch
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt

Instruction

  • Heat the oil over medium heat in a pan. Add the chicken and saute for 4 minutes. Remove chicken from the pan and add the onion. Cook until translucent, then add peppers and mango. Cook 3 minutes then return the chicken. In a small bowl, whisk together the remaining ingredients and pour over the stir fry.
  • Cook for 8 minutes, then serve over rice.
