Ingredients
The following ingredients have 9 Servings
- 2 cucumbers; halved and sliced
- 2 carrots; sliced
- 2 red bell peppers; sliced
- 1/2 medium white or red onion; sliced
- 1/2 cup fresh cilantro; chopped
- 1 cup peanuts; in pieces
- 1 tsp garlic chili sauce +/- to taste
- 2 tbsp sweet chili sauce +/- to taste
- 1/2 cup rice vinegar
- 1/8 tsp black pepper
Instruction
- Slice the veggies and place them in a large bowl.
- Add the cilantro, stir well.
- In a separate bowl, whisk the marinade ingredients together.
- Pour the marinade over the veggie.
- Cover the veggies and shake the bowl, allowing the marinade to fully coat all the vegetables.
- Chill for 15 minutes.
- Remove from fridge and shake, forcing the liquid to mix into all the vegetables again.
- Repeat this until the salad has marinated for an hour.
- Once ready to serve, drain off the remaining liquid.
- Toss the salad with the peanuts.
