Ingredients

The following ingredients have 9 Servings
  • 2 cucumbers; halved and sliced
  • 2 carrots; sliced
  • 2 red bell peppers; sliced
  • 1/2 medium white or red onion; sliced
  • 1/2 cup fresh cilantro; chopped
  • 1 cup peanuts; in pieces
  • 1 tsp garlic chili sauce +/- to taste
  • 2 tbsp sweet chili sauce +/- to taste
  • 1/2 cup rice vinegar
  • 1/8 tsp black pepper

Instruction

  • Slice the veggies and place them in a large bowl.
  • Add the cilantro, stir well.
  • In a separate bowl, whisk the marinade ingredients together.
  • Pour the marinade over the veggie.
  • Cover the veggies and shake the bowl, allowing the marinade to fully coat all the vegetables.
  • Chill for 15 minutes.
  • Remove from fridge and shake, forcing the liquid to mix into all the vegetables again.
  • Repeat this until the salad has marinated for an hour.
  • Once ready to serve, drain off the remaining liquid.
  • Toss the salad with the peanuts.
