Ingredients

The following ingredients have 6 Servings
  • 4 cups shredded napa or green cabbage
  • 1 cup carrots, julienned or shredded
  • 1 cup diced cucumbers
  • 1 large red bell pepper, julienned
  • 1 cup cherry tomatoes, cut in half
  • 1/2 cup fresh cilantro, minced
  • 1 bunch green onions, minced
  • 2 tbsp sesame seeds (optional)
  • 1/2 cup roasted peanuts
  • 1 recipe Thai Salad Dressing

Instruction

  • In a large bowl toss together cabbage, carrots, cucumbers, bell peppers, tomatoes, cilantro green onions and prepared peanut dressing
  • Top with sesame seeds and toasted peanuts and serve. * Salad is best enjoyed fresh, but holds well for up to 2 days in refrigerator
