Ingredients

The following ingredients have 20 Servings
  • 6 cups all-purpose flour
  • 1 1/2 cups plus 2/3 cup grated Asiago cheese divided
  • 2 tbsp dry yeast
  • 2 tbsp sugar
  • 1 tbsp salt
  • 1 tbsp dried Italian seasoning
  • 1 tsp dried rosemary
  • 1 tsp red pepper flakes
  • 1 tsp granulated garlic
  • 1 tsp granulated onion
  • 1 tsp minced fresh garlic-optional
  • 2 cups hot tap water (120-130 degrees F)
  • 4 tbsp extra virgin olive oil

Instruction

  • In a large bowl combine the flour, 1 1/2 cups of grated Asiago, yeast, sugar, salt, Italian seasoning, rosemary, pepper flakes, garlics, onion and water until a dough forms.
  • Transfer the dough to a floured work surface and knead until a smooth ball forms.
  • Transfer the dough to a lightly oiled clean bowl and place it seam side down in the bowl.
  • Cover with a clean towel and let the dough rise in a warm place for 15 minutes.
  • Divide the dough in half and form into two smooth dough balls.
  • Place the dough balls on a baking sheet pan and gently flatten the surface a little.
  • Using a sharp knife cut three slits on each loaf and drizzle with the olive oil. Sprinkle remaining Asiago cheese over the loaves.
  • Place the pan on the middle rack of a cold oven and add a pan of hot tap water directly below the dough pan.
  • Close the oven and set teh temperature to 400 degrees F.
  • Bake for 40 minutes and then let cool on a wire rack.
