Ingredients

The following ingredients have 4 Servings
  • 5 ounces arugula
  • 1/4 cup Balsamic vinegar
  • 2 tablespoons olive oil
  • 2 tablespoons lemon zest
  • 1/3 cup Parmesan cheese (grated)
  • 1/3 cup Pine nuts (lightly toasted)

Instruction

  • Add arugula to a large bowl.
  • In a small bowl, mix Balsamic vinegar with olive oil, until emulsified.
  • Drizzle the Balsamic vinegar and olive oil mixture over the salad. Note: you don't have to use the whole amount of salad dressing.  Use just enough to drizzle.  
  • Top with lemon zest and grated parmesan cheese. Sprinkle lightly toasted pine nuts over the salad.
