Ingredients
The following ingredients have 4 Servings
- 5 ounces arugula
- 1/4 cup Balsamic vinegar
- 2 tablespoons olive oil
- 2 tablespoons lemon zest
- 1/3 cup Parmesan cheese (grated)
- 1/3 cup Pine nuts (lightly toasted)
Instruction
- Add arugula to a large bowl.
- In a small bowl, mix Balsamic vinegar with olive oil, until emulsified.
- Drizzle the Balsamic vinegar and olive oil mixture over the salad. Note: you don't have to use the whole amount of salad dressing. Use just enough to drizzle.
- Top with lemon zest and grated parmesan cheese. Sprinkle lightly toasted pine nuts over the salad.
