Ingredients

The following ingredients have 2 Servings
  • 1/4 cup walnuts (chopped bite size)
  • 1/4 cup blue cheese (crumbled)
  • 1/4 cup dried cranberries
  • 4 cups arugula
  • For the dressing :
  • 1 tablespoon red wine vinegar
  • 1 tablespoon sherry wine vinegar
  • 1 teaspoon dijon mustard
  • 3 tablespoons extra virgin olive oil

Instruction

  • Put all the ingredients for the dressing in a bowl and mix well until the mixture has emulsified.
  • Put the arugula in a mixing bowl and pour the dressing down the side of the bowl. Gently toss.
  • Divide arugula into two separate plate and top with remaining ingredients.
  • Season with salt and pepper. Serve immediately.
