Ingredients
The following ingredients have 2 Servings
- 1/4 cup walnuts (chopped bite size)
- 1/4 cup blue cheese (crumbled)
- 1/4 cup dried cranberries
- 4 cups arugula
- For the dressing :
- 1 tablespoon red wine vinegar
- 1 tablespoon sherry wine vinegar
- 1 teaspoon dijon mustard
- 3 tablespoons extra virgin olive oil
Instruction
- Put all the ingredients for the dressing in a bowl and mix well until the mixture has emulsified.
- Put the arugula in a mixing bowl and pour the dressing down the side of the bowl. Gently toss.
- Divide arugula into two separate plate and top with remaining ingredients.
- Season with salt and pepper. Serve immediately.
