Ingredients

The following ingredients have 2 Servings
  • 4 cups fresh arugula
  • 1 grapefruit (segmented)
  • 1/8 cup slivered raw almonds
  • 1/2 avocado (pitted & flesh scooped out, mashed)
  • Juice of 1 lemon
  • 3-4 tablespoons extra virgin olive oil (or water if you prefer)
  • salt/pepper (to taste)

Instruction

  • Place arugula, grapefruit segments and almonds in a large bowl and toss.
  • Whisk together the avocado, lemon juice, oil or water, and salt and pepper.
  • Drizzle a bit of the dressing over the salad just before serving.
