Ingredients
The following ingredients have 2 Servings
- 4 cups fresh arugula
- 1 grapefruit (segmented)
- 1/8 cup slivered raw almonds
- 1/2 avocado (pitted & flesh scooped out, mashed)
- Juice of 1 lemon
- 3-4 tablespoons extra virgin olive oil (or water if you prefer)
- salt/pepper (to taste)
Instruction
- Place arugula, grapefruit segments and almonds in a large bowl and toss.
- Whisk together the avocado, lemon juice, oil or water, and salt and pepper.
- Drizzle a bit of the dressing over the salad just before serving.
