Ingredients
The following ingredients have 2 Servings
- 4 cups arugula
- 8 small roasted carrots, whole or chopped
- 1/4 cup feta cheese, crumbled
- 1/4 cup pine nuts
- 2 tablespoons olive oil
- juice of half a lemon
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon ground black pepper (or to taste)
Instruction
- Place arugula into large serving plate. Top with roasted carrots (either whole or chopped). Add feta cheese and crumbled feta on top.
- In a small mixing bowl, stir to combine olive oil, lemon juice, salt and pepper. Pour dressing over the salad and toss to combine.
