Ingredients

The following ingredients have 2 Servings
  • 4 cups arugula
  • 8 small roasted carrots, whole or chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup pine nuts
  • 2 tablespoons olive oil
  • juice of half a lemon
  • 1/4 teaspoon salt (or to taste)
  • 1/4 teaspoon ground black pepper (or to taste)

Instruction

  • Place arugula into large serving plate. Top with roasted carrots (either whole or chopped). Add feta cheese and crumbled feta on top.
  • In a small mixing bowl, stir to combine olive oil, lemon juice, salt and pepper. Pour dressing over the salad and toss to combine.
