Ingredients

The following ingredients have 4 Servings
  • 2 cups cooked, shredded chicken (such as rotisserie)
  • 1/3 cup dried apricots (chopped)
  • 1/4 cup fresh dill (roughly chopped)
  • 1/4 cup sunflower seeds
  • 1/2 cup mayonnaise
  • 2 ribs celery (diced)
  • 1/3 cup red onion (diced)
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instruction

  • Add all ingredients to a large bowl. Mix together well.
  • Serve on whole grain bread for a sandwich or romaine or butter lettuce leaves for a low-carb, paleo, lettuce wrap option. Or, serve with crackers for an appetizer.
