Ingredients
The following ingredients have 4 Servings
- 2 cup self-raising flour
- 1/2 cup milk
- 1 cup raw sugar
- 125 g margarine
- 1 cup desiccated coconut
- 200 g dried apricots chopped
Instruction
- Soak apricots in boiling water for 15 minutes, then strain.
- Melt margarine, then add fruit, sugar, coconut, milk, and flour, stirring well after each addition.
- Sprinkle with extra sugar before baking.
- Bake at 180C in a paper-lined, 25 cm x 30 cm lamington pan for 45 minutes.
