Ingredients

The following ingredients have 4 Servings
  • 2 cup self-raising flour
  • 1/2 cup milk
  • 1 cup raw sugar
  • 125 g margarine
  • 1 cup desiccated coconut
  • 200 g dried apricots chopped

Instruction

  • Soak apricots in boiling water for 15 minutes, then strain.
  • Melt margarine, then add fruit, sugar, coconut, milk, and flour, stirring well after each addition.
  • Sprinkle with extra sugar before baking.
  • Bake at 180C in a paper-lined, 25 cm x 30 cm lamington pan for 45 minutes.
