Ingredients
The following ingredients have 4 Servings
- 1 1/2 pounds medium to large Shrimp (peeled and deveined)
- Salt and freshly ground Black Pepper (to taste)
- Seasoning Salt (to taste)
- 1 cup Panko
- 1 cup All-Purpose Flour
- 2 Eggs
- 2 tablespoons Water
- Oil (for cooking)
- Applebee's Dynamite Sauce (Recipe below)
Instruction
- Prepare Applebee's Dynamite Sauce according to recipe below. Set aside.
- Cover a large plate with several layers of paper towels. Set aside.
- Butterfly shrimp by cutting vertically down the back of the shrimp. Leave tails on.
- Season shrimp with salt, pepper and seasoning salt.
- Place panko crumbs in a shallow dish. Season with salt, pepper and seasoning salt to taste. Mix well.
- Put flour in a second shallow dish.
- In a small bowl, beat eggs and water together with a spoon or whisk.
- Heat enough oil to deep fry the shrimp in a skillet to 350°F.
- While oil is heating, dip prepared shrimp, 2 or 3 at a time, in the egg-water mixture.
- Add shrimp to the flour. Toss to coat.
- Dip again in egg-water mixture.
- Toss shrimp in panko crumbs.
- Repeat until all shrimp are coated.
- Place shrimp, a few at a time, in the hot skillet. Fry until golden, about 3 minutes. You may have to turn the shrimp to evenly brown them.
- Place cooked shrimp on a paper towel-covered plate to drain and continue frying until all shrimp are done. Keep shrimp warm while frying batches of shrimp.
- Remove skillet from heat and carefully wipe out with a dry paper towel (alternately use a new skillet or a wok.)
- Add teaspoon of oil and place over high heat.
- When hot, add prepared Applebee's Dynamite Sauce. Simmer for 1 minute to thicken.
- Add fried shrimp. Toss to coat fully and cook for 1 minute more.
- Serve hot.
