Ingredients

The following ingredients have 4 Servings
  • 1 1/2 pounds medium to large Shrimp (peeled and deveined)
  • Salt and freshly ground Black Pepper (to taste)
  • Seasoning Salt (to taste)
  • 1 cup Panko
  • 1 cup All-Purpose Flour
  • 2 Eggs
  • 2 tablespoons Water
  • Oil (for cooking)
  • Applebee's Dynamite Sauce (Recipe below)

Instruction

  • Prepare Applebee's Dynamite Sauce according to recipe below. Set aside.
  • Cover a large plate with several layers of paper towels. Set aside.
  • Butterfly shrimp by cutting vertically down the back of the shrimp. Leave tails on.
  • Season shrimp with salt, pepper and seasoning salt.
  • Place panko crumbs in a shallow dish. Season with salt, pepper and seasoning salt to taste. Mix well.
  • Put flour in a second shallow dish.
  • In a small bowl, beat eggs and water together with a spoon or whisk.
  • Heat enough oil to deep fry the shrimp in a skillet to 350°F.
  • While oil is heating, dip prepared shrimp, 2 or 3 at a time, in the egg-water mixture.
  • Add shrimp to the flour. Toss to coat.
  • Dip again in egg-water mixture.
  • Toss shrimp in panko crumbs.
  • Repeat until all shrimp are coated.
  • Place shrimp, a few at a time, in the hot skillet. Fry until golden, about 3 minutes. You may have to turn the shrimp to evenly brown them.
  • Place cooked shrimp on a paper towel-covered plate to drain and continue frying until all shrimp are done. Keep shrimp warm while frying batches of shrimp.
  • Remove skillet from heat and carefully wipe out with a dry paper towel (alternately use a new skillet or a wok.)
  • Add teaspoon of oil and place over high heat.
  • When hot, add prepared Applebee's Dynamite Sauce. Simmer for 1 minute to thicken.
  • Add fried shrimp. Toss to coat fully and cook for 1 minute more.
  • Serve hot.
